Refugio1. a safe haven; a sanctuary2. a peaceful place to learn, be inspired, create fantastic food—and savor award-winning wines....
Located in the bucolic heart of California’s Central Coast wine country, Refugio is a new venue for learning about and enjoying great food and wine. Learn new cooking and entertaining skills from prominent chefs, cheese-makers, and farmers—all aided and abetted by owner and local resident Brigit Binns, the nationally-known author of myriad best-selling cookbooks, many of them for Williams-Sonoma. Relax under a towering eucalyptus tree and gaze out at gnarled oaks, olive trees, and grazing horses, while sipping local wines and nibbling on inspiring dishes created from local ingredients. Savor the laughter and conviviality that are the natural by-products of living and cooking deliberately.
Classes take place in an expansive and comfortable outdoor kitchen equipped with a wood-burning oven and cook-in fireplace. Subjects vary with the season, and might include Mastering Artisan Pizza, taught by Brigit; Fermentation and Bread Baking, taught by Los Alamos baker Bob Oswaks; Mozzarella Madness with cheese-maker Lindsay Dodson-Brown, or Live Fire Cooking in Your Fireplace, with Brigit and local fire-obsessed chef Pandee Pearson.
Each class will feature several glasses of menu-friendly, limited-production local wines, introduced and poured by the winemaker him/herself, and available for purchase if desired. Upcoming classes will feature wines from Tablas Creek, Barton Family Wines, Domaine Degher, Copia, Ranchero Cellars, and Baker & Brain.
