December '03 Recipe (from The Low-Carb Gourmet, Ten Speed Press, 9/04)

Oyster-wasabi shots with aquavit
Serves 6
Warning: Not for the faint-of-heart!

3 ounces aquavit
6 small fresh oysters such as Olympias, freshly shucked (or use pre-shucked Chesapeake or Pacific oysters)
3/4 teaspoon prepared wasabi paste, or to taste
1 1/2 teaspoons domestic or imported black caviar, or salmon roe caviar
3/4 teaspoon minced fresh cilantro
1 teaspoon orange zest

Place the aquavit in the freezer at least 2 hours before you plan to serve. Chill 6 shot glasses, preferably the straight-sided variety.
If using the very large, shucked Pacific oysters, cut them into halves or quarters. Working quickly, place 1 tablespoon of aquavit into each of the chilled glasses and top with 1/8 teaspoon of wasabi paste, or to taste. Top with an oyster, and top each oyster with 1/4 teaspoon caviar, and a tiny pinch of cilantro and orange zest. Serve immediately.
If it is possible to do so elegantly, drink the whole thing in one gulp.
